Drink This, Not That

I'm a drinker. Always have been. Though today's drink of choice is quite different from what I chose, let's say, 20, or even 10 years ago. Currently, my favorite beverages are water and "mean green" juice.

What is a mean green juice you ask? Green juice is like drinking your vegetables with a little added fruit for sweetness. Each alkalizing glass contains several pounds of produce and is rich in nutrients, vitamins and enzymes. It's a terrific meal replacement and is also a good way to supplement your diet with vegetables--especially for those who tend to avoid them or eat minimal amounts! (The added bonus is that the juice immediately hits your bloodstream and you will feel the energy. Since you are not "eating" food but rather drinking it, your digestive system will enjoy a well-deserved break from working.)

There are oodles of recipes for mean green juices out there, but I think the one I have come up with is pretty spectacular. Loaded with kale, cucumber, organic celery, lemon, ginger and apples, one and a half glasses of this becomes a meal or super healthy mid-day snack. Funny thing is, years ago I also used to drink my meals.

But time has a way to waking you up and making you realize how important it is to take care of yourself. The health benefits of juicing are countless. But start here if you want to learn more about juicing.

Maybe you don't want to buy a juicer or even use the juicer you have at home, but would rather buy it already prepared? My Mean Green Juice
The Cowgirl Gourmet

Print recipe

Makes 30 ounces

1 bunch of organic kale
1 peeled cucumber
4-5 stalks of organic celery
2 organic apples, quartered (I use red apples)
1 peeled lemon (store you peels in a zip bag and place in the freezer until you collect enough to make the citrus-vinegar cleaner)
1 big thumb of ginger

Using your juicer, add these vegetables and fruits to your machine.


Once the juice is made, stir well and pour over ice. Sip your glass of mean green and refrigerate any leftovers. Be sure and drink any leftover juice within 2-3 days.

Now the fun begins--the clean-up! To expedite your clean-up, place a plastic grocery bag in the container that catches all of the leftover produce. When you're done juicing, simply lift the bag, throw it in the trash and wash the remaining components of the machine. I promise you this is a big help!!
